Man oh man... can I just say it feels SOOOOOOO not right to be eating sooooo much fat! Don't get me wrong, my food is rich... in fact, almost taste too rich to be honest. Like I am feeling guilty and starting to wonder, is this really good for me? Oh, and let me talk about carbs for just one minute. It is amazing to me that just from eating veggies and 1 cup of strawberries that I am already over 20g of carbs for the day. UURRGG! I think I need to plan my foods out just a little better. I did pick up some almond flour (already had coconut flour on hand) and am looking forward to trying out "pancakes" tomorrow. I was even thinking about using the pancakes without sweetener or vanilla for savory to use for like a wrap or something.

Back before I started LCHF/Keto, I made all sorts of pancakes. Let me know how the ones w/ almond/coconut flour turn out for you. Also, I had the same reaction. I made this chicken pesto (find it on dietdoctor.com) which was super rich, almost so rich I couldn't eat much of it. And I would just be shaking my head as I was making it...but I knew the weight was coming off, and I'm now on week 7, -37lbs, and I have more energy, feel better, and still hitting the gym and working out. quick tip for the pancakes - beat your eggs until they're really frothy - the more airy you get the mix, the lighter the pancakes. :) i've tried coconut flour pancakes before, and they remind me a bit more of crepes due to the "flatness"....they're still good, just not fluffy like flour pancakes.

Will be anxious to hear how your pancakes turn out. I've made the cream cheese pancakes and they are good but flat and more eggy than I'd like for a pancake. I've always wanted to try some with the almond or coconut flour.....just never got around to it...
