ACK! This site is driving me crazy! I wrote another chatty post yesterday, hit "save" and poof! It was gone. So then, I wrote a brief one with the weight update, and it posted 4 times! LOL! Sorry for the stutter, guys. SO...I ended up not taking my car to the shop yesterday. I figured, why make the 50 mile round trip when I can multitask, and take it in this morning before work. My first client isn't until 1 PM, so I can take the car in before. (I live in a tiny town 25 miles from where the shop and my work are...just in case I wasn't clear about that.) If time allows, I will drop by the public pool after the car appointment and check out their class schedule. It's on the same end of town as the shop. I may have mentioned that I had bought a 15 lb turkey the day before Thanksgiving, and intended to pressure can it. It took until yesterday to thaw in the fridge! I really didn't have the time to bone it out and do the canning, so I decided to spatchcock it and roast it. Y'all, if you haven't tried it, that is a killer way to roast a bird! It was done in just over an hour, all the skin was crisp and golden, and even the white meat was juicy. By the time it was prepped, roasted, cooled, carved, packaged and vacuum sealed for the freezer, and a massive cleanup finished, I spent the better part of 8 hours on my feet in the kitchen. Add to that wrestling a 15 lb bird around, and I got a pretty decent workout! My sister sent me a massive box of Omaha Steaks meat for Christmas. It arrived yesterday, and had 3 different kinds of steaks (sirloin, ribeye and filet mignon) pork chops, some burgers, chicken breasts, and Polish sausages. The note included said, "Supporting your low carb lifestyle. I'm so proud of you!" How thoughtful was that?!?! Time to hit the shower. Have a great Friday, buddies! ~Kes
