Happy Friday everyone! Not feeling great today. Wanted something sweet last night and decided to finally try making some pancakes. I used almond flour/meal and I think the meal part is what got me. I was in the bathroom a couple times last night and am feeling pretty gross this morning. Nothing like sitting at work playing the "should I run to the bathroom or wait" game. Sorry for the TMI, but let my discomfort be a warning to go easy on the almond meal. On the upside, the pancakes really were good albeit very heavy. Definitely need to find the almond flour instead though. Have a great weekend everyone!

Yeah...I have never had an issue with flax meal, but it is pretty fine. This was pretty coarse and I had never used it before.

Hope you feel better as the day progresses. I agree, almond flour will make a world of difference.
