My version of Zoupa Toscana... I'm so proud of measuring each ingredient.

Recipe: 1 field roast sausage (I used the apple and sage flavor), 1/2 large or 1 small white onion, olive oil or vegan butter of choice. Cook the sausage and onion and season to your liking. Add 3/4 cups cubed potatoes and vegetable broth, bring to a boil and simmer until potatoes are tender. Remove from heat and add 1/4 to 1/2 cup coconut milk. Add chopped kale prior to serving.
