I'm liking this "less-processed foods" mini-challenge. I've been wanting for a long time to get away from the boxed foods and take out.
With my surgery coming up, I want to make sure my husband and boys are eating filling, nutritious foods, so I've been researching freezer meals that I can put together before my surgery. This is because, I know, if I leave the dinner decision up to my husband, it will pizza or chicken nuggets every night--not happening!!
So, this is what my planner-mind is focused on--feeding my family when I can't cook it myself. I will have a few of the classic freezer meals--a couple casseroles and lasagnas, but I wanted more variety. Then, I stumbled across crock-pot freezer cooking. I'm very excited about it!! There's all kinds of meals that are made from fresh ingredients and made in the crock pot! You buy all your ingredients and take a couple hours on a Saturday morning to put together multiple meals at one time. Put all your ingredients in a gallon-size freezer bag and freeze flat. Then, you put the bag in the fridge to thaw the night before, and dump it in your crock pot the next morning. When Hubby gets home from work, dinner will be ready! I did a run-through on a few recipes a few weeks ago, and Saturday I practiced a few more.
My plan is, 2 days before my surgery I will put together about 15 meals. This way, weeknights are covered for 3 weeks. By that time, I should be up and about enough to be cooking. But I really like that all the meals will be freshly-frozen ingredients, not processed!
Anyway...I would like to lose 10# at least before my surgery, 15 would be better. Gonna really get my butt in gear and get back to the gym. I will probably only be walking but it's better than nothing!

Koodos to you for finding a great way to feed your family while out of commission! That takes planning and organization - great job! As for losing the 10 lbs, try, try, try!!! Even if it is only walking. Have a great Monday!

Spaghetti squash in place of noodles in any dish is one of our favorites. From mac and cheese to alfredo or even spaghetti!
