So day one of the Atkins Diet was a success. I did not feel hungry at all which was the main thing. I strongly believe that the carbs add to hunger and cravings. No carbs = satiety.

I am going to miss potatoes and I am going to miss fruits, not to mention junk food. I am still considering one cheat day a week or every two weeks where I can go out with girlfriends and just let loose for a night, or have a day with slightly higher carbs. I would likely still see success just not as quickly.

This Friday I am supposed to do just that and I have turned down a lot of invitations to go out over the last couple months because I am trying to stay sober and healthy. Its a tough call!!! I am enjoying caring for myself and taking care of myself so much that I might just not even go. Its just not worth it, and I have noticed such a change in me. Hanging around and getting drunk just isn't me anymore.

Tonight I am going out with another girlfriend to have something healthy to snack on and then Zumba. I am not really a fan of Zumba to be honest but I guess it beats sitting around. I will probably go ahead and log in my jog as well. I am getting better at the jogging. Ten minutes straight x2 with 10 minutes of walking between and after the jogs. I am going to 5mph which is great.

If it's mashed potatoes you would miss, try mashed cauliflower. I am not on a low carb diet, but we eat mashed cauliflower all the time simply because it is delicious! :) Also, on pinterest there are recipes for roasted cauliflower and "rice."

I think so. I put a little garlic, parsley, salt and pepper on mine and its almost like the real deal.

Beautiful, I love mashed cauliflower with low carb milk (well heavy cream) gravy. I also like it riced as a rice substitute.
