I know when a vegetarian recipe has hit the spot for me when I finish the plate and think "I needed more veggies with that"...
Cottage garden Pie, topped with cauliflower cheese, swede (rutbaga), & carrot mash.
Which is a simple mushroom and vegetable stew topped with the mashed (actually more like a purée It went further than I wanted it too, luckily cauliflower doesn't turn to glue like mash does if you over do it) and baked through until hot and crusty... The "problem" being what to do with leftovers. Not sure I can eat it four days in a row.

woot, found a pack of takeaway style metal boxes just right to take these. Only thing was they were too small for 1/4 of the Cottage Garden Pie. So I have 4 packs instead (such a shame that... ;)
Just need to remember the fraction is: 0.1875

Tescos do those as the foil boxes with card lids they also do the plastic takeaway boxes too... And all in different sizes. The plastic ones are good to freeze with as you can throw them in the microwave too
