Day 16. It's my day off, and it's always hard because I'm relaxing at home and naturally want to snack.

So cold today. Snow blew in last night. I still made my way to the gym this morning, despite the snow. I told the elliptical who's boss (uh, me). Very proud of this accomplishment.

I weighed myself this morning, although it wasn't my "weigh day," which are usually Saturdays. I couldn't help it, for some reason. It read two pounds lighter (251) which is amazing, and was a good motivation to sweat it out at the gym this morning. But I know it's probably just a daily weight fluctuation. If I weigh myself tomorrow and it's back at were I was (253), I'm likely to be disappointed. C'mon, now. Don't weigh yourself every day and drive yourself crazy.

Egg whites for breakfast were surprisingly filling. Trying to figure out what I want for lunch- a mini flatbread pizza? A ham sammich? A leftover turkey burger patty from last night (DELICIOUS BY THE WAY!).

As you can tell, last night's dinner was pretty amazing. Ground lean turkey was buy one, get one free at the market. We mixed in some BBQ sauce, white pepper, ground black peppercorn, and garlic powder into the ground turkey, made mini burger patties, and had them on Oroweat sandwich thins with our own toppings (for me- lite mayor, ketchup, onion, lettuce). Super delicious, juicy patties. Highly recommended.

Probably making balsamic vinegar chicken for dinner tonight, one of my favorite chicken recipes. Take boneless, skinless chicken breasts, throw them in a baking pan with a tiny bit of olive oil, douse in balsamic vinegar, top with oregano, paprika, pepper, and garlic powder. Put in the over at 375 for 45 minutes, flipping halfway through and adding more spices/balsamic. I like to cover with aluminum foil to keep the chicken moist. This recipe is delicious, especially if you like balsamic vinegars/dressings. This recipe also happens to be the first big meal my fiance made for me while we were dating.
