I'm sitting here finishing a late breakfast of chocolate peanut butter pancakes. I have a lovely simple recipe using banana, egg, baking powder, and coconut flour that makes big fluffy high-fiber pancakes. Yesterday I added blueberries when I made them for lunch. Today, instead of adding mini chocolate chips like part of me wanted, I added a tablespoon of chocolate peanut butter to the batter. Mmmm, satisfying in so many ways. :o)

Yesterday I fought off the siren song of chocolate :o), but spent the day after Zumba baking blueberry muffins & savory oat biscuits & creating a big mixed veggie curry with chickpeas, yams, & all the assorted veggies in my fridge. I entered the three recipes in my cookbook. Somewhere between that, doing laundry, and reading some of my new book, I ate way too much! Maybe it had something to do with how my day started ...

Yesterday I did my normal morning routine, dressed in Zumba clothes, heated some leftover oatmeal bake, and was fixing my quick cold coffee. I heated a couple inches of water in a tall glass, dissolved espresso powder in it, then stood in front of the open fridge adding cold filtered water from the spigot of our two gallon container, stirring while thinking of other things.

I heard a "tink", thought huh? then a trickle of cold espresso started, became a flood & a crack! as the bottom of the glass hit the Italian tile floor. I turned off the spigot (duh), thought of going for scrap towels, but noticed the flood heading for the hall carpeting AND running from under the fridge along a grout line at an alarming rate. I grabbed the kitchen towels to stem the tide, hollered at Beau that I WOULD save his food dish & stay out of the kitchen.

It took me about 20 minutes to clean up the glass and espresso; I had to clean inside the crisper drawers & the bottom of the fridge, the door of the dishwasher, etc, as well as the kitchen floor & the edge of the hall rug. Put the rinsed kitchen towels in the washer. When I was changing into my Zumba shoes at the gym I discovered the espresso freckles on my lower legs, quickly washed them off.

The good news was that with all that warm-up, I did awesome at Zumba, danced my buns off! The energy kept flowing, and I accomplished a lot. Worked up quite an appetite, ahem. I sampled one of my new muffins. A snack here and there. A couple biscuits with the curry. I eat healthy, just too much sometimes. I wasn't going to do that any more, really want to take better care of myself & lose a few pounds before Vegas.

I am turning on the computer and am going to print out DFW's inspirational journal/ self-challenge and post it on th fridge. And the pantry door. And my bin with baking supplies in the garage....
