Quiet Sunday....for now. Church, typical chicken lunch, but this time I made up some fresh veggies....a change from frozen.

DH is part of a mega-concert tonight, so I'll be shuttling him to the venue to drop him off for pre-performance rehearsal. This is a Christian concert with combination choirs....over 200 voices.....plus various instrumental groups and smaller singing groups, as well. Between all the participants and all the attenders, parking is a major challenge. Just easier if we have only 1 car there.

Once I'm back home after dropping him off, I'll be making up a low-carb pizza for me, for after the concert. DH wants a "real" pizza from Papa John's. Fine for him if that's what he wants, but I just can't afford anything off plan for myself. We'll call ahead to PJ's on the way out of the parking lot after the concert and the pizza should be ready for him by the time we drive there. He'll have his pizza and I'll have mine and we'll both be happy!

Looks to be a relatively quiet week ahead, as January wraps up. More than enough stuff for me to do: year-end and tax paperwork continues, 2 volunteer days, a consignment to prepare, and my 6-month follow-up bloodwork to get done.

Oh, almost forgot....a few Valentine packages to get ready too. February always sneaks up on me.

Does your DH have CD's of his music??..would love to hear him...Oh the dreaded tax season..we have our personal and also the Co..so I get hit twice a year..Your soo sweet to do things for people on Valentines...sorta like the Christmas packages you do??....Enjoy your pizza..:O)

Hoping the concert when well for DH & you both had pizza, I love pizza, we had LC pizza Saturday night, not really sure if Dad enjoyed or not. Valentines, wow, whoever is your valentine is very lucky indeed!

Hope the concert was AWESOME! Great job planning ahead with the pizza. What do you use for the crust? I made a "meatza pizza" last week...it was very good and hubby loved it! lol Have a great day!

Heather, the concert was pretty amazing. The acoustics in this hall are really good, so everyone sounds their best.

Bren, I doubt you could hear him in the mix of everything else. Sometimes, the music directors will record the performance, but it's not like a professional recording....you hear coughs in the audience, stage chairs shuffling, etc. Not sure if they recorded this year. The Valentine's packages go to the same folks as Christmas....family members in residential facilities. I try to do something for them for every holiday, even if it's something little. My mom is one of them....with Alzheimer's, it's not as if she really knows who it's from, but at least for just a moment, hopefully, she can sense the love and caring.

Buffy, BOTH pizzas were really good....the PJ one, according to DH only....I stayed strong and did not sample any of it.

GG, low carb pizzas are just different, so your dad probably still enjoyed it very much. Actually, I think the "real" pizza versions with spinach, pineapple, chicken, etc. are even MORE different than the low-carb ones.

Stef, the "crust" is actually a mixture of 4 eggs, 1/2 brick of softened cream cheese, 1/4 cup Parmesan cheese, garlic, and Italian seasoning....all baked at 375 for 30 minutes. Then, you add toppings of your choice and bake for another 20-25 minutes, so it can be a pizza, or a breakfast/spinach type thing. The basic recipe is in the Recipe section of this site, Deep Dish Pizza Quiche, I think. You just have to adjust all the counts according to what you actually put on it.....and how many servings you make out of it. I use a 13x9 pan and cut it up into 6 large pieces with the option of cutting those in half (like for a snack).
