A quick, easy and delicious frittata that's so hearty it's not just for breakfast.
Ingredients
Directions
- Slice mushrooms, chop bell pepper and red onion.
- In medium skillet combine turkey sausage, onion and bell peppers, cook over medium heat until all pink is gone. Reduce heat to low.
- In mixing bowl combine 6 large eggs and a dash of half and half, briskly whisk until combined. Pour mixture into skillet and add the sliced mushrooms.
- Cook on low for 10 minutes or until edges appear firm, transfer to oven and cook for 5 minutes or until apppears done. Remove from oven.
- Grate the parmesan cheese, sprinkle on top and enjoy!
- Great for South Beach diet.

This recipe is ok for phase one of Atkins, just watch your intake of the cheese, meat and vegetables! Sounds good tho.
