Chicken Tostadas

A very fresh idea for a snack or meal.

Directions

  1. Spread the tostada with a tablespoon of smashed beans.
  2. Cover tostada with lettuce, chicken, salsa, a tablespoon of sour cream, onion and avocado.
  3. Spread all over with the Mexican blend cheese, salt and enjoy.

This is a good recipe and it's something that you can "dress" up or down. We make it a lot around here, just a different version each time. This also can be made low-fat and low-calorie. My version is only 150 ish calories a serving. Just be sensible and what you put with it. Also I cook my chicken with organic dipping salsa, with a little water added to get it a zesty taste.

I cooked my chicken with salsa in the crockpot until it was falling apart, then used a fork to shred it. Kept everything else in the recipe intact...it was yummy. I did individual calorie count on all my ingredients, though, and came out well under the number given in the recipe...I use a lot of "lite" and low fat ingredients.

What can i say, i love this dish its very simple and fast do do... its perfect for a hot days if youre vegetarian could substitute chicken for chicken flavor soy, the cream with tofu cream and the cheese with tofu.
