Cold Oatmeal Toppings
Bananas, raisins, applesauce, blueberrries, or soy milk. I also mix in my flax seed powder, protein powder, and flax oil. I get my things all ready the night before too! Some days hot, sometimes I do as you do and cook it the night before and have it cold.

Need to vent
I have to agree with Lee2010, let him do his thing and you do yours. Both of you have to do it for yourself, not for each other.
I would also like to mention to keep check on your stress over his eating. It could sabotage your efforts.
Now for the woman to woman on the sneaky stuff...
Men are darling little creatures, but we all know ladies that we have to pull a few strings to get things the way we need them to be from time to time. Instead of it stressing you out and causing a conflict, try some other things.
1. Serve up a salad first, yeah yeah he might not eat it. When he smells that food cooking and it's not ready...he'll eat it. Serve the salad before any other food is on the table, restaurant style.
2. Plan a fruit salad or some other healthy "dessert".
3. Remove yourself when he does that. Say something like, ok I'm going for a walk cause I don't want to catch any extra calories from that!! Laugh, pat him on the forehead and wander off, giving him time to ponder that.
Remove yourself to go to the dishes and clean the kitchen.
4. Make a rule only eating at the table. And I mean snacks included. Make food "special" and thoughtful. I'm not sure if that was an issue, but you posted...he brought it to where you were.

And remember you can only prepare and serve it, how much he eats is in his hands. Take note of his habits, even the bad eating habits and try to help him determine what is going one. He might just needed some "comfort food". I don't know about everyone else but I consider spaghetti comfort food.

You don't even have to tell him that you aren't going to eat it and it's a no, no. He knows. Just don't serve yourself up any of the things that you are trying to do without. If he offers it to you or asks why, give him "the look". LOL That's what I do. Eventually when he sees your willpower and restraint it might make that light bulb go on for him.
He can't do it for you, and you can't do it for him. Again I agree with Lee2010, lead by example.

Constipation
I was going to post about the water, Bodicea beat me to it!
Can't stress enough to increase water intake. Even if you say you have always drank water and drink your 8 to 10 a day...add one or two more glasses. Any change in diet and especially adding the fiber, needs water. We need water to expel. If water with fiber doesn't do the trick, consult your dr.

One A Days Women's Active Metabolism. I saw a commercial for this a couple weeks ago and started taking it. I have noticed an increase in energy.
