Weight has come off pretty easily this week, which I am very happy about. Maybe this new mini-goal will happen before October 7, and I can make even more progress!

I found a library book with some really good lower fat recipes in it. Some of them are pasta based, and while I can have pasta, no problem, I've been playing arund some with noodles made from zucchini and carrots, and liking them a lot. My DH has type 2 diabetes, so I am thinking of making a couple of the recipes using vegetable-based noodles and/or cauliflower rice in place of the pasta and rice, but still keeping the low fat aspects for me. One is a jalapeno popper 'boat' made in a zucchini, so that one would require no changes. The other is a chicken enchilada skillet supper with pasta...that one seems like a good candidate for some 'zoodles', as my friend calls them.

We're heading into the weekend, so more construction for me! I'm hopeful that we might just get the rest of the soffits done. Next step will be purchasing the bathroom fixtures and framing out for the shower. We have fixtures picked out, but I want to have them in our posession, especially before we frame the shower area. Other than that, I'll do a little more food prep, work around the yard a bit and I think I'm scheduled to give Hubs a haircut. What are your weekend plans?

Down another 1.5 overnight. My weight kind of held on at 200-201 for a while, so maybe it's letting go of that? I didn't starve or anything yesterday, so this morning was a happy surprise.

End of May, just before I started all this, I found pants on clearance for $3 a pair that were suitable for work. I bought 6 pair, and have been wearing 3 pair. Monday night, I took in those three pair at the waist because they were getting to be too loose. I may just re-sell the 3 pair that I have not been wearing, or I may alter them more substantially so that I can wear them later. A lot of shirts that I had been wearing as jackets, over a camisole, are fitting much better now, and some are getting a loose enough that I may need to alter them soon.

On the flip side of that (or at least is seems so to me), now that my gallbladder is happy again, I'm looking at adding back a couple of things...egg yolks, and lean beef. I had some very lean beef on Monday at supper, and it was a real treat! We have our own hens, so eggs are always on hand, and I have missed the yolks. I'm not a big egg-eater, but they are a good base for some meals, so we'll see how it goes, I guess.
