I cut corn tortillas into triangles last night and baked them until I had toasted tortilla chips. They came out really good. I can have 16 for 1g. fat, and with salsa and/or frijoles, they will make a really easy low-fat meal or snack.
White nectarines are delicious...in case you were wondering. I hope you're having a wonderful day!

Fell off the wagon...landed on a pack of apple bars (like fig newtons, but apple). It's good that they are low fat, at least. Removed the rest of my snacks for the day, and my goal is to finish as strong as I can at 107% of RDI....

My RDI is 1600/day. After spending the weekend below 1300 each day, and working both days on framing in the basement, I'm up one pound. It doesn't add up mathematically, but I did start some new medicine on Thursday, and I've felt a little off since I started it. I woke up this morning both hungry and bloated, so the gain was not a surprise. I'll just keep on doing what I'm doing, because overall, it's working, and because my test results from my doctor visit are not indicating gallbladder surgery as necessary, unless I continue to aggravate her. So...I'm playing nice, keeping fat intake low, and hopefully, I'll have a whoosh in a day or two! Soooo close to my first goal!!

Tonight's supper was 'naked' nuggets - ground turkey mixed with shredded zucchini and spices. The zucchini adds bulk, and keeps them tender and moist. I had them with oven fries (light spritz of oil spray, no other oil) and celery...and hot sauce, bbq, ketchup and some light ranch that I made...and a couple bites of pickle. It was a really tasty meal, only 312 calories and less than 3g. fat. I made a double batch of the turkey nuggets, so I can have them again in a couple days.
I also made a few lunches and prepped some snacks today. We worked up a sweat in the basement, and got more of the framing done than we had for our goal. We're pretty tired now, and taking it pretty easy the rest of the night. Menu is planned for the week, so I can populate my tracker a few days out, at least with some meals.
