Doesn't seem to matter what I eat... seems to be carbs everywhere. I know that they are necessary for brain function and synapse in the nervous system, but by my calculation, I should have more brains than fat!!!

You don't need carbs for brain function. It needs glucose, and the liver makes that daily even without eating carbs. You might want to read up about ketogenic diet, and listen to Jimmy Moore and Dr. Adam Nally's Keto Talk podcasts. Very informative. But you are so right, carbs are everywhere. As soon as one wants to avoid most of them, you'll notice how they are everywhere. :)
