Chris1979's Journal, 11 February 2010

Well, I'm back at work today. :( But I really did enjoy yesterday, it was so fun to have a snow day--- until our power went out around 7:30 PM and didn't come back on. So we got my laptop (luckily it was fully charged) and watched a couple episodes of The Office on DVD (love that show!)

I managed to make a great meal for dinner for us BEFORE we lost our power. It was chicken breasts stuffed with chopped up apple and fat free shredded cheddar cheese and a sprinkling of Italian bread crumbs. Soaked in a little white wine and low fat/sodium chicken broth with some cinnamon, salt, garlic, pepper, curry, oregano, basil, garlic, onion powder, and a sprinkling of brown sugar. That probably sounds like an odd mix but YUM!!! Just put it on the stove and cover and cook for about 20 minutes. Highly recommend. :)

My weight barely changed, only down 0.2. Tomorrow is my weigh in, would like to at least be back to where I was a week ago (142.8). Oh well tomorrow starts a new week and I will do my best to be better this weekend so no more jump ups in weight occur.

At least school was cancelled again tonight so I will be using that time to WORK OUT!

THREE THINGS I'M GRATEFUL FOR TODAY:
1) Made it safely to work
2) No school for 2nd day in a row
3) Our power came back on this AM

Have a great day everyone! :)

I remember when Camden Yards opened... I was in 6th grade. It's a gorgeous ballpark. I was always #8 when I played softball so I could be just like Cal Ripken lol.

That chicken dish sounds awesome. I am going to have to remember the date of this journal so I can write it down. I'm glad you had your computer charged when that power went out. I just hate when we lose power. Really makes you think about how much you depend on it.

It *does* sound delicious, especially to me since I have been holding back for several days now. For some reason every time someone mentions a recipe it is as if I were having it myself and I am deriving great satisfaction from just reading about them. :-)
