northernmusician's Journal, 21 December 2015

So yesterday I ate 1400 calories before the evening out. At the party I ate some chips (6 cookies... shhh) and a pile of veggies, I think I did pretty well. Then I had 2 pieces of toast when I got home. I'd say I'm over calories for maintenance, but not by much. Carbohydrates still manage to shock and amaze me.

Carbohydrates are a fascinating nemesis, so lovely they may as well be singing 'Didn't Leave Nobody But The Baby' down by the river.

Water weight fluctuations in the body. There are several reason besides carbs. The good thing is its 0 calories to store and 0 calories to lose which is why it fluctuates so much. Enjoy the cookies and watch the total calories. A couple of high days won't derail your diet as long as you get back on track.

Calorie counting is fuzzy math at best....you're doing great.

I agree, Mahjohn. Trying to discover a direct correlation between calories and weight fluctuation is a losing game. Actually, once Thursday hits and I'm home for the holidays, everything should be fairly stable. I'm amazed this year at the lack of chocolates at the house. Last year we took 8 boxes to my son's. Will enjoy some of the 'bad' foods and keep the good stuff stacked around.

You definitely seem sensitive to sweets (snowballing carb effect). Or at least, you admit to it, anyway. But knowing is half the battle...

Make my chocolate candy (NO SUGAR) - 1 cup coconut oil, 4 Tbs Butter, (Melted) 2 Tbs Almond Butter, 50 -60 drops liquid Stevia, 1 Tbs Vanilla extract, 3 Tbs Nestle's Cocoa mixed together. Fold in Sugar Free Whipped topping (2 Cups) Pour onto greased parchment paper lined cookie sheet and refrigerate for 30 minutes, then cut into bars. You have to leave it refrigerated. Don't be greedy though. It is morish

You could say it's all fuzzy math IMO, whether calorie counting, low carb, or whatever. Different people find they do best with different levels of carbs in their diet just as it applies to calories, RDI, etc. Plus the food we eat even if it's measured is never exact, always estimates based on the knowledge available. IMO what's important is to find the number of calories, or number of carbs, or mix a macros, where you find the best results for the plan you follow. That's when you learn about how your body handles the fuel you put into it and what works best for you, and where you can target in on the numbers that make it happen. NM, glad you enjoyed the party. Even the cookies. I had my share of them last week. :)

SheaDlady, Any particular Brand of Whipped Sugar Free Topping?
21 Dec 15 by member: Lucygirl1
SheaD. That sounds like a chemistry experiment to me. :) Jim, I agree. What I really know is that starchy carbs ... I just don't feel well when I'm eating them. Bloated and gross mostly. Why do I eat them sometimes then? WHAT, ARE YOU KIDDING ME?

Yep, my son says I experiment on him all the time - but he LOVED the Licorice flavored candy I made. NOT ME! that's stuffs nasty as black jelly beans! I generally try and find the store brand SF whipped topping, but Cool Whip makes it. And when my son eats it, he can drop 3 pounds overnight!

Mmm, black jelly beans!

For black jelly bean flavor candy, just substitute 1- 2 T Anise and for the Cocoa - guaranteed flavor, just not black.
