Well, doing pretty good today. It is so cold outside, it makes you want to fill up on something warm, so, experiment time again. My son is wanting "Bread" pudding - you know the kind Granny made with the left over biscuits. I took up that challenge and recreated "Bread" pudding that hopefully will be tasty and lower carb. Base ingredients are almond flour, coconut oil, butter and eggs. I have been using liquid stevia for several years now, and have been pleased with other recipes using that. Here goes nothing - and totals in at less than 4 grams of carbs per serving. Verdict: I got too much stevia in it and it is way too sweet for me - but my son loves it!

another favorite I love bread pudding.... with all my post that I posted saying that this is a favorite of mine people here are going to think I a dag on pig lol but anyway it is... Im keeping your recipe sweetie in my notes.. thanks for sharing;)

you are welcome to any recipe that suits your fancy. I gotta ton of them, some low carb, some low cal. All are good.

3 servings bob's red mill almond meal flour 2 large egg 2 servings spectrum organic virgin coconut oil 1/2 stick butter 4 servings kroger heavy whipping cream 3 tbsps vanilla extract 4 oz water 2 servings sweet leaf liquid stevia Directions Melt coconut oil and butter, add remaining liquid ingredients, then almond flour. Mix all ingredients up and cook at 350 for 20 - 30 minutes
