Had a couple of phone interviews this morning, and could feel a migraine coming on. Yuk! Had to hop over to the pharmacy and pick up the meds. Decided to wait to take them until after the interview so I don't sound loopy. :-) The interviews went well. We'll see.

I had the last of the Cheesy Beef Bake for breakfast. So filling, I don't know when I will want lunch.

Last night, attempted fried chicken legs in coconut oil and a no-carb hot wing sauce recipe. I don't know why the legs were sticking in the pan. I never deep fry, so I may have needed more oil. The ending result was tasty but the sticking to the pan removed what skin was left on them. The coconut oil did a good job, but will not use again to fry because it is too expensive when I can just use olive oil. Great moisturizer tho. Was rubbing it into my hands as I was cooking. :-)

Hot wing chicken legs... that's the stuff!! We ate sooo much of those when we were on Atkins!! then a little side of blue cheese and some fresh veggies... You are making me HUNGRY! I might have some recipes for you... I'll look thru my books. We had one that we got off Food Network for Cheesy Chili Chicken that was SOOO delish. George Stella used to have a show on there called Low Carb and Loving It and we got a bunch of recipes from him. Also, try sugar free chocolate pudding with chocolate soy milk. It's thicker so a little more like custard but SOO good. Especially if you like chocolate pudding, which we do! Hope the migranes leave as swiftly as they came, and GOOD LUCK on your interviews!

Dani, Thank you very much for the pudding idea. I love pudding and wasn't sure how the SF tasted. I've been doing Jello, but hey, a person can only eat so much Jello. hehe I would really appreciate any recipes you want to send me. That Chili Chicken sounds delish. Thanks on the migraines. The meds are kicking in.

OMG, I totally agree with you on the jello... I will find my recipe! The SF pudding tastes fine with regular milk, too, but not being low in carbs, well, you get it. It was a once in a while treat, for sure, but a nice break when you want choco.

I am not sure but take a look at the ingredients of the pudding mix. Normally this powder is based on starches. So, even if it is sugar free it might not be carb free.

Thanks Jozette, I just looked it up and the darned pudding has 8 grams of carbs in it. Rats! Dani, I wonder if you could make a homemade pudding with the soy milk, using unsweetened baking chocolate and Splenda. Seems possible.

If you are a little bit inventive, use gelatine. Heat up the whatever milk and put in it the flavors you want. Then add gelatine to it and dissolve it (don't boil). Kind of a milky jello... or when it is almost stiff incorporate some whipped cream. That should make it a little creamier than jello ;-)I used to make some cake toppings with cream and gelatine or jello. If I have a quiet minute I will look it up.

Cheesy beef bake!!! I'm dying to try that recipe. I'm sure someone added this, oil may not have been hot enough! LOL about the moisturizer.. I started moisturizing my face with grapeseed oil - I'm in LOVE. Is hot sauce allowed during induction??

Katie, The recipe is in my Cookbook if you want to copy it over to yours. I made it for dinners, but ended up eating it for breakfast as well. I think there are suggestions for spicing it up on the comments under the recipe. I did add some spices to it. As far as I know, hot sauce is allowed. I mixed Louisiana Hot Sauce with a stick of butter and rolled the fried legs in it. Messy and yum-o!

On the oil, I thought it was hot enough. I am thinking maybe I didn't put enough oil. I know in a fry daddy, you fill that thing with oil. I maybe had an inch and a half of oil. Maybe the chicken is supposed to float in it. LOL!

If you make the SF pudding with heavy whipping cream, then a serving only has the 8 grams of carbs and is alright for low carbing. I do it once in while, myself, and in fact just made a low carb dessert using the pudding and the crust for the taco bake (with some splenda and orange extract in place of the taco mix). It is really good!

Olivia, when I make wings (or legs), I sprinkle them with Andy's season salt, and bake them at 425 until they are crispy. Then serve with the hot sauce and homemade ranch dressing. Works great!

Stef, Thank you so much for the tips, especially the wings/legs. It was a real pain to deep fry them and messy too. Plus, I wanna save that yummy skin. I will try your way. I guess I'm too cautious, but not ready to have that many carbs in a dessert. I'm sure I will try it at some point. Sounds good. Have any of you ladies seen the website, www.lowcarbluxury.com. The lady who runs it has her own weight loss story and some great sounding recipes as well. About 5 different kinds of cheesecake.
