A Review
So, my order from LC Foods came this morning. I was torn between using the tempura batter mix or the pasta mix. Since I didn't have the ingredients for a great tempura on hand, I decided to make up a batch of the pasta. The old pasta machine needed some serious dusting, I'll tell you!
I misread the instructions, and added too much olive oil, but I forged ahead anyway. The dough came together nicely, and after kneading for about 2 minutes, was stretchy and firm (and a bit oily...oops!).
The extra oil made it slippery going through the rollers, and I could only get it to compress down to a 5 setting, which is pretty chunky. Still, I was able to cut the dough on the fine setting. After letting the noodles dry for the recommended 20 minutes, I boiled them for 3 minutes, then dressed them simply in butter, garlic powder and Romano cheese.
The flavor is like a whole wheat pasta, and the texture has a nice 'tooth'. There's no sliminess from the flax meal in the mix, and the noodles absorbed the flavor of the dressing nicely. They are a bit grainy, but unless you're a texture freak, they are pretty darned good! The best low carb pasta I've been able to come up with to date. I only rolled, cut and cooked half of what the batch made, and it yielded 1.5 cups of cooked pasta. At 2g net carb for a cup and a half, I will certainly put these on the menu pretty frequently. I'm sure that the next time, when I actually have the right proportions of ingredients (DUH!), they'll be even better.

Try a puttanesca sauce for LCHF, and I am sure the noodle texture will be an after thought.

If you like creamy sauces, try tweaking diet doctor's creamy pesto chicken to make a pasta sauce. That's out of this world on flavour (I usually add some chilli and thin it down with water).
