I subscribe to Butter Bob Briggs Youtube channel. Two weeks ago, he uploaded a video explaining how herbivores are living on a high fat diet.

In a nutshell, the plantstuffs feed gut bacteria in the colon. This gut bacteria turns the carbohydrates into stearic acid, a short chain fatty acid, which is used by the animal for energy.

I was thinking about this a bit because one of my buddies stated, "if I eat 160 calories worth of string beans and carrots my body will respond differently than if I eat 2 slices of bread".

We can go on to ask what kind of bread, i.e. wheat or almond. Each type of food is metabolized by our bodies to extract the maximum energy and nutrients possible. It will take more energy for her body to break down 160 calories of string beans and carrots than two slices of bread. Also, how many carrots and string beans do we have to eat to get to 160 calories?

Ruminants have to eat grass all day to meet their calorie needs.

I don't have any conclusions to offer. In fact, I don't think it is at all necessary that we defend our WOE by posting links to scientific studies. It isn't at all necessary to try to sway others to a particular way of thinking or eating. As literate adults, it is our individual responsibility as part of self care to research for ourselves.

When people ask our opinions, or want information, we should freely share what we know and believe. We can share our personal experience at will.

We need to respect the intelligence of the literate adults we are addressing to exercise their free will and choose their own best path.

I watched that video, too. I like the way he breaks the science down into layman's terms. AND, the fat the herbivores are living on is *saturated fat*. Made by their own bodies. Ultimately, I think it boils down to a couple of hard facts. 1-that the science of nutrition is just now beginning to be delved into and understood, with regards to metabolism and subtle interplay between macronutrients, micronutrients, hormones, and the ever-important microbiome; and 2-while we humans are essentially 'created equal', epigenetics is proving that environment, both internal and external, is a much more powerful dictator of gene expression than simple genetics believes. While I carry a very strong genetic disposition for diabetes, because I was aware of it from a young age, I made the choice to limit sugar in my diet. So did my sister...and neither of us has developed diabetes. However, being ignorant, until recently, about carbohydrate metabolism and insulin resistance, we both have had varying degrees of metabolic syndrome and weight challenges for much of our lives. Great post, Lady..sorry if I hijacked it!

The plants transform sunlight and water into nutrition for the cows, and the cows transform it into fats and proteins for us. So we are powered by transformed sunlight and water. It's all pretty simple, yet we can make it so complicated.
