Merry Christmas Eve my friends!!! Oh boy, oh boy, oh boy!!! I am excited for this weekend to begin. I'll be heading home around noon. Last night I made the macaroni salad for Christmas dinner ... a family tradition and baked cake in preparation for frosting today for dessert on Friday!! I wanted to do something different for dessert. We usually have pie of some sort. I have been WANTING cake. So ... I thought I'll just buy a cake from one of the local grocery bakeries. I looked not at one place but three and nothing flipped my switch. So then I got to thinking ... gee I could make my own cake. Then I wandered over to the baking aisle. LOL!!! I couldn't decide what kind I wanted!! I didn't really have the time to do it from scratch and boxed cakes were on sale so I bought 3 different kinds!! A vanilla cake, a butter yellow cake, and a chocolate cake!! I decided I would make three layers, one of each!! Now I just have to decide if I want white or chocolate frosting!! Actually I think I'll do both!! One for inbetween the layers and on to frost the exterior. I have truly lost my mind!!! It made me chuckle at myself though and that was fun!!

So today I really have nothing to do here ... therefore I brought my stocking stuffers to work to wrap!! That holiday spirit has definitely caught me now!! I don't imagine there will be many people here today ... which is fine. Mom had to work otherwise I would have stayed home today but at least we'll get to leave early.

My five for today ...

1. the beauty of where I live ... the drive into town today was spectacular ... a few clouds, the frozen lake, bits of blue sky combined with a variety of reds and oranges as the sun rose ... wow!!!

2. family time ...

3. cooking traditions ...

4. the excitement of watching my loved ones open their gifts

5. realizing that while I can enjoy the taste treats of the holiday I DO NOT have to make myself miserable!!

May many blessings fall upon each of us this season, the blessings of realizing what we DO have rather than being focused on what we DO NOT have. While the holidays sometimes are filled with stress and disappontments of unmet expectations I hope this year we all can let those things go and focus on what we do have to be grateful for ... there is always something. Have a very Merry Christmas for those of you who celebrate this season!!! ENJOY!!!

You are so right! Lets all be thankful for what we have. Good friends and family and love! I love the cake idea. I have been craving chocolate cake forever. Chocolate molten lava cake. Have a great Christmas Eve. Hope work goes by fast for us.

Your journal captures the true spirit of gift giving wherein one is excited to see his friends and family receive the gifts! God bless you and yours! My guys will eat Sara Lee's pound cake -- out of the store bought tin foil container. They soak it in milk and coffee. They usually gobble it up without my touching it!

I'm sure you've already gotten everything, but maybe for next time - make a cream cheese frosting!!! Its so easy, and SO YUMMY! Its just cream cheese, butter, confectioners sugar and vanilla extract (or any flavor extract you want really). I make that rather than using store bought stuff every time because the stuff in the can is to sweet for me. Anyway, have a great time!!!

Thanks Sara!!! That's a great idea!! I had not thought about that!! I still have to make a quick dash to the market and I can definitely pick up some cream cheese!! Maybe I'll do the layers in chocolate!! Thanks!!!

Carol, you made me laugh out loud. Thank you for that story about the 3 cakes and how you decided to do it all. Now do the same thing with the frosting. One layer chocolate and one layer white and so on. Oh, do butter cream for the white. Just a thought. lol You are sooooo in the Christmas spirit, it rubbed off on me. Okay ... last minute groceries ... things I had forgotten or didn't buy enough of ... is DONE!!! I have decided I am much too impressionable. Someone here ... I think it was chattycathy ... mentioned Bailey's and so I had to go and buy some it just sounded so good!!! I forgot to tell you all about my strategy for avoiding chips and dips ... a holiday tradition in my family. I bought a bunch of veggies I'm going to cut up and some low fat ranch dip and that's what we'll snack on. The boys can still have chips if they want, we have them at home, but I wanted something different. Must be the Christmas for "different" for me this year ... wonder what that is all about?

Ah ... the veggies are cut for dipping, the macaroni salad has been stirred and tended to, the cake ... might I say is beautiful ... is frosted, the Christmas tablecloth on the dining room table, husband napping, and me waiting for my grown up son to arrive so I can steam the tamales!! Thanks for the frosting hints ... I went with chocolate buttercream between the layers and cream cheese frosting on the outside!! Put it on the cake platter my mom and dad received as a wedding gift 52 years ago!!! Oh yea ... I way overdid the stocking stuffer concept ... everyone has an overflow pile!! LOL!!
