Happy hump day back to you. No wheat is working great for you, that is great. How low are you looking to go with carbs? I don't end up sticking to LCHF for long periods but am wanting to limit net carbs to a reasonable amount and will be figuring that out over the coming weeks.

Jmb3450 - What I have to do is get my lazy butt in gear and start cooking. For instance, cauliflower rice, zucchini lasagna, etc. are just to die for. But, unfortunately, you just can't buy them in the frozen food section or through the drive thru at Burger King.

I'm trying to get my carbs through (mostly) fruits and vegetables, and very very little wheat, which is so irritating to my airways anyway. When you do your cooking, make extras of anything that will be as good next time you eat it--I make a huge salad and eat it every day for a week, ditto with veggie sticks. I buy almonds and peanuts and measure them into snack size bags, and I never ever leave the house without a packet of those and a sliced apple in a bag, tucked into my purse. Larabars, the ones that are only fruit and nuts, are good for this too. Then I always have SOMEthing with me that's okay to eat if hunger hits. (Also much cheaper than running through a drive-through!)

Good for you Buffy, I remember that grains were a problem for you.

As many of you know I don't do low carb
Good planning Elizabeth. I try to have an apple with me. It is so much easier to eat healthy if you have done some prep ahead.
Not low carb: My plan includes a fruit and veggie smoothie to start my day. I have mostly just been using a banana but I love it when I have a fruit salad (dressing a bit of yogurt) in the frig to snack on or toss in my morning smoothie. I have decided to make one each week. Any left can be buzzed and frozen in paper cups and tossed into the smoothie maker.

Wholefoodnut - Always love hearing from you. I recognize that everybody is different and diets are NOT one size fits all. When I am behaving myself, I do try to include healthy carbs daily, including raw fruit.

Oooh, Wholefoodnut, those smoothies sound good! I agree that it's easier to be strict about carbs. By getting most of mine through fruits and veggies, I do not crave carbs the way I did when carbs meant things like bread and pasta!

Congrats Buffy on your progress. I love carbs and sugars but I feel so much better when I stay away from them. My motivation is that I feel better and even my skin looks better. Low carb/high protein is how I'm eating at the moment. I had lots of cravings in the beginning but I believe it was for sugar. Don't forget about the sweet potato if you need something a little heavier. I wish you well and support in advance.

ChicaLean thanks for mentioning the part about ur skin looking better on LC I got off program when I had my 2 retina surgeries and I just figured my skin looked yucky because of anastesia but maybe it's because of the carbs. I'm back on LC now so maybe it'll get better.

Addie - to be honest - those recipes were added such a long time ago that I have no idea what they are. But, as for pork chops, I have a tendency to cook them TO DEATH. I've found browning them on the stove and finishing them in the oven works better. Also - I cook pork in a sauce quite often. Good thing this isn't a cooking show - LOL. Best of luck.

A good substitute for bread is the MIM( muffin in a minute) made with round flaxseed.
1/4 cup flax meal (8.09 total carbs, 7.6 fiber)
1/2 teaspoon baking powder (0.64 net carbs)
1 packet splenda packet (0.9 net carbs)
1 teaspoon cinnamon (1.84 total carbs, 1.2 fiber)
1 large egg (0.6 net carbs)
1 teaspoon butter
microwave for 1-1.5minutes
