Bring sauce pan with water to near boil. Gently add each egg with a slotted spoon to the hot water. Cook for 30 minutes. While still cooking put ice and water in a metal mixing bowl. Take out one egg at a time from the boiling water and put them in the ice water. Crack and peel each egg one at a time and set aside. After the 9th egg is pulled out turn off the heat on the sauce pan with the thee remaining eggs. Continue taking the eggs out of the hot water placing them in ice water then peeling. Cut all eggs in half and remove the yolk. Place the yolks in a quart size bag. Add melted butter, mayonnaise, mustard chopped pickles and tobacco sauce into quart bag with yolks. Seal bag and smash mix ingredients with your hands. Cut corner of quart size bag and squeeze equal parts into each cooked egg white half.

I've seen Deviled Eggs, but never knew how to make them. The ingredients are on my allowed list, with a slight hesitation on Tabasco. Want to make something special on Sundays, and this one is very tempting. Thanks.

Love deviled eggs. Never have cooked them so long. Start in room temp water, bring to boil for eight minutes, immediately move pan to sink run under cold water then add ice to pan. Cool in ice water for five minutes. Peel immediately. Do what works for you.

Erquiaga Sounded easier. Maybe the longer, slower cooking make the yolk a bit more creamy or something. Don't know, but certainly on top on my list of things to try.

Can you have Dijon mustard? That's what I use. No Tabasco or pickles. I do use a hot paprika to garnish.

Looking forward to the results.

I've never cooked eggs that long. I put my eggs in water, cook on high until water comes to full boil. Remove from heat, cover and let sit for 10 minutes, then put under running tap water to cool, and peel. Result is tender whites and fully cooked yolks with no green edges.

I put the eggs in the water, bring to a rolling boil and turn off heat and cover for 13 minutes. Then pour off most of the hot water and run cold tap water over it for several minutes. Then I peel them.

Erquiaga Mustard sounds good. Also came to think of Anchovies. They can bring on a bomb of flavor. Hesitation towards chillies, due to their quick action of intestinal permeability.

Lol. Guess we all have our own way of cooking Hard boiled eggs. Figured I put my two cents in. Start with cold water - bring to boil then turn heat down to simmer for 20min / put under cold running water until eggs are cool to handle As for filling mix mayo and Dijon mustard / add paprika on top for color
