I bought some almond flour when I first started Keto and used it for the first time on this. That’s what’s on top with Parmesan 😋

Cv, there’s only a 1/4 c. almond flour that is mixed with Parmesan and sprinkled on top. Yes, baked 😊

if you are baking it why the almond flour?? when I made eggplant parmesion I had to add a little flour in with the parmesion cheese to coat the eggplant after dipping in egg then fry it. I think if you are not frying it would work without the flour. I make chicken parm the same way, but now just dipping in egg and then parmesion cheese and frying.

Hi Bask. I don’t know why the recipe called for it, but it was a 5-star recipe, so I followed it to a T, and it was the best eggplant Parmesan I have ever had in my life, so I’m glad I did.
I was worried about the effect on the scale it would have and my level of Ketosis, but this morning results prove there was no need for worry 😊
