I hate to cook one reason is because I work late and have to get up early. I have every kitchen gadget you can probably think of. I don't like meat, spicy or sauces. Crock Pot meals would be great if thought about it more.

I'm lucky to have sundays off so I cook all my food on the weekends and prep it out

I wish I had days off. I just became manager of a salon. It was a mess. All young girls just out of school and no manager in months. The books were a mess and still cleaning. One girl has magnets in her butt. She just can't stand up. Only one will help clean and she is only 3 days a week.I get called every day with the sillest questions.

My family and friends are always saying I never get a day off. Even if I do I really don't.

When I was busier I used to put a whole chicken in the crockpot and just let it do its thing all day. At night I'd make "tacos" using whatever bag of chopped salad I had and shredded cheese. When I traveled to Maui with my family years ago I'd do the same thing, but roast the chicken (we had a condo with a full kitchen). I'd put the chicken in, then head to the pool with the kids. We'd come back two hours later to chicken tacos made with homemade salsa with mango and veg I'd get from the farmer's market down the street. I still try to do my vegetables as fresh as possible but I don't always make it the farmer's market (Thursday nights and Saturday mornings near me).

Pre-cook your meals, life saving grace!

Start with simple tasty and healthy meals that you can store for couple of days. I started preparing Breakfast cups (eggs, capsicum, mushroom, spinach) and bake it. Yummy!

Hectic schedules like that make it so hard to eat right! Try balancing prepared foods with fresh made foods. That helped me when I’d come home later and have to cook.

I make chicken once a week. Either in the Instant Pot or on the grill. The rest of my meals are made up of veggies for the most part. That’s enough potential that no meal is ever the same.

I love my crock pot. I normally do mine on Saturdays. Also, as an easy clean up tip, invest in crock pot liners.

Try foil packets on the grill. You can choose any protein, (I love fish) add veggies, fresh herbs, salt pepper and olive oil. Make several at a time. Seal them by twisting or folding the packets.Throw them on a hot grill for about 15 to 20 minutes. You end up with delicious portion controlled fresh tasting meals, that are great hot or cold. Throw them in the fridge and then grab and go for cold lunches or reheat if desired for dinner. So fast and easy!!!

We did a kitchen remodel last year, after a water leak ruined many of the lower cabinets. After I pulled everything out of the old ones in prep for the remodel I tossed out or donated 3/4 of my kitchen gadgets, just found them not being necessary so why store them. We went a month cooking out of the microwave and grill before I had my kitchen back. We are retired and and it took a water leak to make me realize we just do not need all that stuff any longer. Although I have the time now, I just don't feel like cooking as often. I fix more salads so what I do is prep salad veggies in big zip-lock bags, cook up several extra pieces of chicken or fish when I do cook, store the extras in the fridge then we have protein already to go on top of our salads. You can also plop a can of tuna or boiled eggs on top. I make my own spaghetti sauce and soups too. I always make big pots of these and freeze portions for later. I don't mind cooking every other or every third day so this works for us. Cuts down on the kitchen clean up time too.
