My liver is pushing out stored glucose again, but my ketones are in the sweet spot. Lunch went well. My younger sister cooked everything. She made spicy roast beef, mashed sweet potatoes, roasted Brussels sprouts, and green salad with mushrooms, which she served with various types of dressing. I chose bleu cheese. I tried to hide the fact that I passed on the sweet potatoes by using the serving bowl to obscure my plate. They like to lecture me on the "dangers" of skipping carbs.

My children called this morning. They are preparing for their trip to Texas in four weeks. Since they are doing keto as well, food won't be a problem. The elder wants to lose her pudginess on this diet, and the younger just wants her brain to work. Chemical-free food helps greatly, and following keto makes that easier for her. Some of the worst adulterations of the food supply come through grains. Whenever possible, we consume only grass-fed, grass-finished beef, free-range poultry, and wild-caught fish. Right now, I can grow my own organic vegetables. Also, the couple in the next space have raised beds where they attempt the same.

This week, I put back three quarts of sauerkraut. There is nothing quite as tasty as the homemade stuff! One head of cabbage can feed me for a month or so, and this is how I get my probiotics. Here is the recipe:

1 quart jar (glass)
1 pint shredded cabbage
1 pint very warm water
1 tablespoon sea salt

Dissolve salt in water. Pack cabbage in jar. Pour salt water over cabbage. (Here, I add another sprinkle of salt to the top.) Loosely cover jar.* Store in warm, dark place for 7 to 10 days. Use paper towels or newspaper to catch any spillage.

*You must allow air to escape the jar, or it will burst. Salt will kill the bad microbes, but the good ones will need room to expand. At first, I could not believe that this worked, but my ancestors did it this way and lived to tell the tale!
