I snacked on Portabella Mushroom covered with pepperoni and 3-Cheeses while waiting on my Wonderful Supper - Mashed Cauli, Fried Zucchini, and Baked Pork Chops.

@Robyn Lewers I do make it myself and different depending on my taste buds for the meal. Tonight was just plain buttery goodness like traditional mashed potatoes. Sometimes we do a garlic cheese or a spicier version. I also make the cauliflower rice. Love it and my family loves it.

Yum yum!!! Recipe for the plain buttery goodness please!!! Lol I’ve bought the frozen pre made ones but they look nothing like yours yours look like real potatoes!!

I have never worked with those mushrooms and have a question, do you precook it someway before using it in a recipe?? I guess I should stop being lazy and look up how to prepare it properly. I love mushrooms.

@Robyn it is so simple. ----Head of cauliflower-grate it small-medium into the pot you will use. --------------Add in a chunk of unsalted butter (I don't really know how much because I LOVE butter. I'd guess about 2/3 cup. ---------Cover with water and bring to boil then stir and turn down to medium for about 10 mins to cook well. --------------Strain it then place into your blender or food processor ------------Add in 2TBS of Heavy Whipping Cream ---------then blend until nice and creamy. If it is to thick add another tbs of cream and repeat. ------------add salt and pepper to taste. I usually let each person salt pepper their own. Because I put a scoop on my plate then salt and pepper and more butter then another scoop on top...lol

@baskington Portabellas are pretty big. I usually will bake them in the oven at 400 for about 10-15 mins then do what I am going to do with them. For the recipe above I baked them then added the toppings, then baked them again until nice and bubbly.
