Journal for Jan 22,2018
Helped a friend with computer printer problems today. Then grocery shopping. Tried to mix it up a bit and buy some different foods, especially some protein sources. One was a food I have never bought before and I was not at all sure what I would do with it - Dry Curd Unsalted Cottage Cheese. Straight out of the container it was dry, and had no flavour... kind of disgusting. But I thought it is so healthy though, I would try to blend it smooth, add some flavour, and make it into a spread. It actually turned out really well, so I added the recipe to my cookbook. I call it "Cottage Cheese High Protein Spread & Dip". I had it at 5 pm as an appetizer snack with rice crisp crackers, and some white tuna and pieces of sweet pepper. I also put a light sprinkle of coarse sea salt on top. Delicious! And it satisfied my craving for both crunchy and creamy. Then I was able to put away my groceries and cook something for dinner later. Late supper at 9:30 pm - chicken, potato & leftover serving of mushrooms and cheesy topping.

I use dry curd daily as it can not be beat for a rich protein source, I mix it in with my egg whites when I make an omelette and also put it into homemade vegetable soup.

Ryan311, I will try it in my next soup, and also in my omelettes from now on. I think I will also buy some regular 2% cottage cheese as well, because it is so good as dessert with some cut up fruit.

I have now added lifetime ingredient to my fridge - dry curd unsalted .4% MF cottage cheese. So versatile and has really helped me to to pump up my protein each day, so I don't have to eat so many eggs and meat.

Hi all. I'm new. 😉 Just had to suggest the dry curd with lemon and/or lime zest and a touch of Stevia. My favourite dessert.
