I agree, do not add too much back too soon.
Make sure any bread carbs you are adding are 100% whole wheat...read the ingredients label, do not rely on what the package front says. You will sometimes see "enriched whole wheat flour" and you do not want anything enriched! Also, make sure 'sugar' is not one of the 5 first ingredients....on any label.
Just a little fruit at a time.........high fiber like apples w/peeling.
Your body may also need a little more time on PH 1 if you are not seeing the results you would like right away after shifting to PH 2.
