PokeyJack's Journal, 08 June 2016

There's just nothing like patchkying around in the kitchen, inventing stuff to eat: I feel like a mad scientist sometimes, tee hee hee! Heavily modified another Fat Bomb recipe -- sure seems like lately I can't just follow a recipe for those, what's up with that? -- to the point that it's a whole 'nother thing. Will try to remember what I did, so it can be added to my Cook Book.

For lunch, I added Coconut Oil to the bean-and-corn salsa on the turkey burger. It lent a slightly "exotic" flavor to the Cowboy Caviar, which was interesting, but probably not worth repeating. We live and we learn.

Meanwhile, my brassicas get so danged frozen in my fridge that they shrink (!!), unlike water, which expands when it freezes. So, I sauté them up instead of trying to make a salad of frozen veggies, which'd totally upset my dental work! Got a hunch that using Bacon Fat instead of Coconut Oil might be good. Boy, howdy, was it ever: numma, numma, numma!

Trying to "leave room" for a Fat Bomb, to see how they are. I didn't add any sweetener at all, and used Essential Oil of Peppermint, as I have no Peppermint Extract, and the Oil is way stronger than the extract. Might be a little too cooling. Or, maybe not.

I'm confused. How are beans and corn on a Keto diet?

OMG are you shuffling around in my kitchen??? LOL, I use my essential oils for food flavoring, my favorites are peppermint, sweet orange, black pepper, rosemary, basil and red thyme. It only takes a drop, less is better or you will kill any other flavor in the dish!

Add Sweet Fennel to that list, I love it's sweet licorice flavor in meat dishes!

I guess as long as you don't go above your carb limit it matters not what form the carbs take, the higher the carb count, the smaller the portions you can indulge. I go for the low carb veggies so I can eat them in mass quantities :) Three beans and 2 kernels of corn do not a full tummy make!

I save my lemon and grapefruit for my cellulite massage oils and toxin eliminator baths, cheaper to buy lemons for the flavoring of foods! I go through about an ounce of both of those per month.

I put 2 drops of Bergamot es oil in my last fat bomb, was out of cocoa. It was good. Citrusy. Got me thinking about lavender eo. I'd read where women used to put lavender in foods. butter w lavender or rose eo. haven't tried yet though. still thinking bout it.

@debrafrederick, your list of EOs is inspiring me! @IzelZAwake, what a great idea, I would never have thought of that: I bet it was yummy! And yes, lavender is often put in foods. Several years ago, I bought a jar of lavender-infused chocolate spread, and it was HEAVENLY. As far as Rose oil goes, I have had it in lemonade, which was quite an enlightening flavor-experience. There are probably books upon books about cooking with essential oils: I need to hit the library to read a few.
