I have to celebrate this one. My grandparents were from Lebanon, so my mom used to make these meat pockets called Esfihas. Yesterday I made them and they turned out just like my mom's. My wife was so surprised. Just to have an idea the dough is very light and melts in your mouth. When we cook the esfihas dough and meat go raw into the oven and make friends there.

The meat is prepared with finely chopped tomatoes and onions and then bathed in lime juice. I assembled them in triangles as you see in the picture, and when they came out of the oven it was like a tale from the 1,001 nights. Each esfiha 138cal, 14g carbs, and 6g fat, and a lot of love from my ancestors.

What a beautiful story of how creativity in cooking can connect us to each other and to our past. I love to cook. I love the processes within each step. For this reason, I cherish that process and refuse to rush or to otherwise compromise my enjoyment of what consider to be literally sacred. It is a miracle to not be hungry. I have more thoughts. This is such a beautiful post. Yes, food is fuel. But the meaning we assign to cooking, food preparation, eating matters. It is possible to imbue into the process of consumption the ideas of gratefulness, grace, connection and harmony. Agreement with the body is so powerful. You can change your perspective about what consumption means and it can lead to agreement with the body. Love, love, love this post. 💙

OH HECK YEAH!! Those look so delicious. Isn't it incredible when you finally duplicate an old family recipe? I can never duplicate my mom's empanadas, but I do make dried codfish dish (Bacalao) just like I had as a kid. I even shared with a chef here and he wanted the recipe. Yours are so up my alley!!

My grandmother was half Lebanese and used to cook a lot of recipes from scratch. All I currently know how to make is humus, but I'm hoping to give these a try sometime!
