Simple. 1 carton egg whites, 200g pumpkin, 1 scoop of protein powder & cinnamon. I have mainly used quest proteins. I use walden farms syrup & reg "whipped topping" can style. This was more liquid batter but you can use half the whites or another scoop of protein to thicken it up. Super moist. Easy to flip. Took me a long time to make decent ones that weren't rubbery. Pumpkin does the trick.
