I hate when I get so busy that I have such little time to stop and eat. After saying I was going to eat better I ended up not having time to run out and get anything. Actually the real problem ia that I've recently been told to also watch my sodium intake and I'm finding it hard to find foods that fit the program. I am keeping my foods on the "approved" list but I need to adjust my calories. I'll keep working on it.

you'll get there. once you get accustomed to what foods you can eat it will be a breeze whipping something up.

Thanks! I'm trying some small changes to the diet today with the addition of some carbs. I tried a recipe out of the Atkins cookbook.. crepes and cheese filling, but it was honestly terrible. It also says you can put fruit filling on top of them (which my kids did) but everyone only ate them because we all invested time in making them. I'll have to figure out the breakdown for the food diary but I won't be making them again. I saved it all just in case I find a use for the cheese filling, and maybe I can use the crepes as a sort of bread or "muffin". Lol.. I just hate to throw things away and will have to "repurpose" them. ;)

i have had some real flops when it comes to atkins recipes too, it makes me wonder if people actually enjoy them or if it starts to taste good after you've been on the diet a couple months!? i make fake pancakes by taking two egg whites and beating them into peaks, then i stir in the yolks and some cinnamon, sometimes a little splenda. i cook them in butter and they should turn out very light and fluffy. i top them w/ butter and sugar free syrup. they definitely do not take the place of real pancakes but when i have a craving for something sweet they help. i make them so often that it takes about ten minutes to prepare and cook them. good luck with your recipe search.

I do something very similar for fake pancakes, too, but I also add ricotta cheese. Ricotta is very versatile for Atkins and I'll to post some of my easy everyday uses for it.

I love ricotta, please post some reciepes! I would love to try something new. the basics (eggs, meat and cheese) are getting very boring! I would love it! Thank you
