Thai Beef Salad with Peanuts
A quick toss together salad that's tasty and filling.
Ingredients
Directions
- Trim excess fat from beef. Cut into thin strips and place in a medium bowl.
- Add lime juice, soy sauce, water, ginger, and garlic. Toss to mix.
- Add green onions, cucumber, and bell pepper. Toss again. Cover and refrigerate at least 1-2 hours, or until time to serve.
- Place lettuce in a salad bowl. Pour beef, vegetables, and any remaining liquid over the lettuce.
- Toss together just before serving, then sprinkle peanuts over the top.
