A slimmed down version of southern style fried yellow squash.
Ingredients
Directions
- Place iron skillet on stove and get pan hot.
- Wash and rinse squash. Slice squash in rounds, as thick as you like.
- Place in a gallon Ziploc bag. Add salt, pepper, and olive oil spray to slightly coat.
- Add cornmeal and shake the bag, coating the squash.
- Pour into hot skillet. Cook, flipping the squash occasionally, until squash is browned and cooked down.

I was doing this already, but I don't put the cornmeal in it. I also left the bag in the fridge over night or a couple of days then cooked it. I think it really had time to soak up the olive oil and seasoning. Very good.

Squash is one of my favorite vegetables and this is the way I always prepare it, except that I don't add the cornmeal; I just don't think it's necessary. The dish is delicious without it.
