a nice variation is: fill the caps with salsa & sprinkle with a small amount of mexican 4 blend cheese or other fav queso.

I make a similar dish. I saute garlic, onion and bell pepper in a small amt of olive oil, add salt, pepper, paprika and tumeric. When veggies are tender add about 1/4 cup water and cover pan. Simmer until most of the liquid is gone. Fill a large portabella mushroom cap with the veggies, add cheese. I like a combo of grated parmesean, grated sheeps milk cheese and slices of colby. Bake in a covered dish for about 15 minutes. Delicious.

It's pretty good, though, I would have liked my mushroom to be a little more thoroughly cooked. I am not sure if it had to do with my oven, or just the timing (maybe a little bit of both). I will make it again, and just cook it a little longer.
I also added cilantro, tomato, and onion to it.
