Pastryless Beef & Cheddar Quiche

Easy to cook with many variations, this recipe is very satisfying as a main course with veggies, at lunch time with a salad or a slice as a snack.



  1. Best to use a tin of corned beef which you cube and put in a shallow ovenproof dish.
  2. Slice or dice the onions, chop mushrooms and add to dish.
  3. Whisk the eggs with cheese, salt and pepper and any herbs you fancy (a dash of Worcestershire sauce adds a kick).
  4. Pour over corned beef mixture.
  5. Bake in the oven at about 350 °F (180 °C) until golden and bubbling. Allow to cool for 10 minutes before cutting.
  6. Note: Recipe can be varied to suit whatever meat or veggies you have hanging around; peppers, chicken, ham, veggies, the only limit is your imagination! You can also make low fat by substituting the cheddar cheese for cottage cheese although not for Atkins followers!

A little high in fat, try for a leaner beef cut.

If it's too high fat you could try one of the variations i suggested - it's great with chicken, ham or whatever low fat meat you fancy or leave out the meat altogether!!
