Very tasty and healthy soup that's low in sodium and fat.
Ingredients
Directions
- Sauté onions in frying pan with margarine. (Optional to add a teaspoon of sugar to onions to caramelize).
- Boil water.
- Add a teaspoon of beef broth powder to boiling water, simmer.
- Add pepper, Worcestershire sauce and onions to simmering broth.
- Pour broth into an oven-proof bowl, add slice of bread, top with shredded mozzarella cheese.
- Broil in oven until cheese is bubbly (does not take long so check oven every minute or so).
- Add fresh parsley on top of soup. Enjoy!

I used this recipe today and it turned out really yummy. To make it Atkins legal I used bacon fat to saute the onions, a can of low sodium beef broth instead of the powder, and instead of bread I took some frozen spinach, cooked it, drained and dried it, added an egg and some Parmesan cheese, mixed it up and made two patties that I coated on each side with parm, and fried them in the skillet with butter. Put my soup in a glass dish, put the spinach patties on top then topped it all with cheese and broiled until the cheese started bubbling. Was so delicious and the spinach patties were nice and chewy, not soggy like I usually got pre-Atkins when the soup was made with bread.
