Hello...
Hi Sasie. I am also gluten-intolerant. After the initial diagnosis, Celiac disease can start to seem overwhelming. Eating gluten-free can be more satisfying than you might imagine! Check out glutenfreegirl.blogspot.com for some inspiration (reading her blog got me over the initial shock and helped me to find joy in eating again!)

Is Atkins healthy?
Hi. I am a confirmed Atkins for Lifer. I've lost 125 pounds and kept it off. There are 4 phases to the Atkins diet - starting with the most restrictive (Induction) and going to the diet that you will eat for the rest of your life (Maintenance). Depending on your own carb tolerances, metabolism, degree of health issues, etc... you will learn to eat the right number of carbohydrates for you. (For me that number is 110 net carbs, with 35 grams fiber for a total of 145 grams of carbohydrate daily.)
FYI - Cucumbers do not have too many carbs (1/2 Cup of sliced Cucumber has 1.6 net carbs. They are filling and nutritious.)
