Here we are almost at the end of the 20 NC Carb Challenge and I am happy to say that I've stayed below 20 NC since day one (actually I started a week before the challenge to practice). My weight loss so far on the challenge has been 5 lbs which isn't really as much as I was hoping for but it is 5 lbs off of my body and never returning again! Wow I sound like a Biggest Loser contestant, lol. I just realized that the Walk 60 min. a day challenge started and I already failed! Oh man, I don't think I will be able to keep that up but I will try my best. I really need to set out a slotted time for exercise because I am so busy it is hard to find time everyday but I know I can squeeze in at least a half hour.

Today was another great day on the diet. I am trying to ease up on the cheese and make sure I eat more frequently. For breakfast I ate one organic brown egg, two slices of bacon, a slice of provolone cheese, and two cups of water. For snack I ate two small stalks of celery stuffed with a serving of whipped cream cheese. For lunch I ate tuna salad with two cups baby spinach, a serving of shredded mozzarella and two cups of water and for dinner I ate steak with a cup of baby spinach, a serving of shredded mozzarella and two tablespoons of creamy italian dressing. Wow, I love how I said I was trying to cut back on the cheese, yet I had cheese in every meal. I am a cheese-aholic though, so this is good day for me....

Today was another great day on Atkins. For breakfast I had two deviled eggs, a slice of american cheese, and a serving of vienna sausages with two cups of water. For lunch I made a salad with baby spinach, chicken breast slices, ham, mozzarella cheese, cheddar cheese, and ranch dressing with another two cups of water. For dinner I had some more baby spinach, some italian salami and provolone cheese with three cups of water. I've been doing great all week with the diet and I've eliminated the Atkins products but I weighed myself this morning and I am still the same weight. I don't know maybe I am weighing myself too early but I was hoping to see at least a half a pound loss. I'm going to try to not stress about it and give it some more time. I still have four more days. I've been doing some research on stalling on Atkins and one website talked about lowering my caloric intake while on Atkins to break through the stall and another talked about going off the diet for a few days and then going back on to shock the body and restart induction. It didn't say go out and eat cake, pizza, french fries, cookies and ice cream. It just said to eat some whole grains and fruit and up the carb intake to switch the body back to carbohydrate burning for a few days then switching back to low carbohydrate to restart the induction process and break through the plateau. I wanted to know if any one has ever done this and if it was successful in breaking through stalls. Also if any one has any advice as well it would be greatly appreciated. I'm eating right now all of the same things I was eating when I was losing weight but it seems that my body is now accustomed to it or something, I don't know. Just hoping to see some result at the end of the week no matter how small the loss is, I'll be happy......

Today was another great day for my diet. My mother made her incredibly delicious lasagna yesterday and gave us some but I did not touch one bit of it and I am so proud of myself. My husband and daughter are eating it. There is enough to feed them for like a week. LOL. It's so hard because her lasagna is soooooo freakin good but I know that seeing a loss on the scale will be sooooo much better. This week I definitely think that there will be a loss on the scale. I've eliminated the Atkins products and made sure I am eating regularly, I've also been drinking water only during my meals and throughout the day. I am confident this week I will break through this stall.

For breakfast I ate a slice of american cheese, two slices of muenster cheese, two slices of deli chicken breast, a serving of vienna sausages and a cup of water. For lunch I ate two fried eggs with a serving of hot sauce, three slices of bacon, two stalks of celery stuffed with herb cream cheese, and two cups of water. For dinner I made a delicious taco salad with ground beef, two tsp. of taco seasoning, two servings of shredded cheddar, four cherry tomatoes, a serving of baby spring mix greens, three tbsp of sour cream, and four cups of water.

I'm excited to finish out the 20 NC challenge and really looking forward to next month's counting carbs challenge. I've also joined the walk 60 min. a day for 5 days challenge. I really hope I can keep up. The Super Slim Me challenge has been a breeze because I haven't gone to any fast food restaurants and the Daily Journal Challenge is going pretty well. It's tough to get on everyday to type up my food intake and to journal my thoughts and feelings but I've been doing well I just have missed a few days or so.....

Another good day for my diet. I have been sticking to the plan, I've limited my Atkins product intake to 1 a day, I've not gone above 20 NC but I still don't feel like I am losing any weight. I don't know if it's a plateau or what? I figured out that I lose weight when my protein and fat are high and my carbs low so I've been doing that for the past few days and have not seen any progress. I feel like I may be in a rut and I don't know what to do. Maybe I need to up the exercise and do it more often. Maybe I need to drink more water. I really don't know what to do....For breakfast today I had an Atkins shake, for lunch I went to Friday's and had the Key Lime Shrimp Skewers which were 12 NC with water. For dinner I had two cheeseburgers, a slice of onion, mustard, a pickle and some more water. My NC for today was 18.12...

I guess we'll see Sunday if I've made any progress. Hopefully I will have dropped at least 1 pound. I'll be happy with that.....
