So it's the end of the day and now I sit back and reflect on how my day was. It was a stressful day, I had my hands full with the girls and no help from their dad when he came home of course (but that's a whole other issue). I just put them to bed so now I have some time to sit back and actually think about my day. Well, this morning I made a cheese omelet with 2 eggs and 2 slices of American cheese. I coupled that with two slices of ham and 1 tbsp of sour cream. I was fine, it was filling. Happy to start off well.

I ate lunch kind of late so I was pretty hungry going in but my mind is so focused on this weight loss I REFUSE to over eat as I usually do when I go into a meal too hungry. I drank a lot of water with lunch and breakfast so that helped. For lunch I cooked a small chicken breast, diced it up and threw it into a salad with some cucumber and 2 cups of mediterranean blend salad. I used about 2 tbsp of Creamy Italian and added about 1/4 cup of shredded cheddar. It was really good and I was so relieved that I felt satisfied with that meal. I can definitely notice my appetite changing because before Atkins I would have looked at that rinky dink salad like "You're joking right?" I'm really happy about that as well as surprised but it's a pleasant surprise and a very welcome one. Stomach keep it up!

For dinner I ate a medium chicken breast that I sliced in half, pounded thin, then rolled in 1/2 slice each of ham and muenster cheese and coated it with parmesan cheese. Kind of like a bootleg Chicken Cordon Bleu (I'm just trying to work with what I have). It sounds better as I type it than it did when I ate it. Unfortunately I was chatting away on the phone and forgot about the chicken in the oven so it was a little tough but whatever I still ate it. I paired it with a cup and a half of mediterranean blend salad a little bit of cheddar cheese and creamy italian dressing. My entire net carb for the day was about 11.97g so I am more than happy with that. Shoot, I'll take it, cardboard chicken and all!! As long as it means I'm losing weight I am happy. I'm really not that hard to please....lol...

I'm so ready to lose this weight! Since I started Atkins a few weeks ago I've dropped 14 pounds. 4 of those 14 have been on FS. I'm so happy to have found FS because I know this is exactly what I need to keep me focused and hold my hand during this journey. It's inspirational to see other peoples successes. I've never been so happy for people I've never met in my life, lol. I feed off the positive energy of this site and in return I want to do better for myself. I'm really looking forward to meeting more people in similar struggles as myself and also those who have conquered the battle and have reached their goal. I'm excited about learning more from those with more experience and knowledge.

Today is my first day journaling for the challenge and I am feeling pumped. I'm also on the 20NC Challenge so journaling all of my food intake and feelings will help towards that challenge as well. For breakfast I ate 2 fried eggs with salt and pepper and a little bit of hot sauce, 3 Vienna sausage links, 2 slices of Muenster cheese and 8oz. of diet green tea. Great low carb breakfast because it was tasty and I felt satisfied, not full or hungry. I went to my parents for a little BBQ and ate about 3/4 oz. of Cheddar and 3/4 oz. of Monterey Jack cheese and one sweet sausage for appetizer and then for the main course enjoyed a nice plentiful sized Porterhouse steak with about 2 cups of salad along with one can of Diet Coke. The Salad included spinach, cherry tomatoes, and cucumbers and I added about 2 tbsp. of Ranch dressing. I felt really good after that meal. Very satisfied.

I'm starting to figure out the right point where I am no longer hungry so I don't over eat and get that awful stuffed feeling. Today was a really great day. I made the right choices and I feel really good about myself. I wanted to stop eating at around 9:00pm but since I ate my lunch and dinner combined practically, I was feeling a little hungry at around 9:30ish and had a light snack of Chicken breast deli slices and Muenster cheese. Tomorrow I am going to try to space out my meals and snacks better so I can stop eating at around 8:00pm. Hopefully tomorrow I can set up a better eating schedule. Until then, I guess.....Ciao!
