Why do I look FATTER?
You're losing muscle, not fat. Keep any eye on your body fat percentage. To give you an example I weighed in today, and weigh the same as I did last week, but my body fat is down 2%. That's 5 pounds of PURE fat gone forever! The scale said I weighed the same though, because A). I had a 2% gain in water, and B) I gained about 2 pounds of lean muscle tissue (not uncommon when starting out in weight lifting). I'll trade the fat for water, and muscle any day, even if the numbers overall on the scale didn't go down.

You have to eat to maintain muscle mass, and to grow it. By starving yourself at the same time you're fatiguing your body I would bet almost anything you're body metabolized the muscle, while storing extra fat. Even though your weight went down on the scale, if you were watching your body fat percentage you would most likely have seen a big gain in body fat.

Ask me how I know this....... :/

snacking after diner
There's absolutely nothing wrong with snacking after dinner, as long as you stay under your daily caloric limit. In fact, it's good for your metabolism to snack all day! I wish I could post a link here, but search Google for "Frequent snacking linked to healthier diet". Even the naysayers say there is "only a slight benefit", but it definitely doesn't hurt.

There are lots of new studies out there that suggest eating later at night isn't going to cause you to burn fewer calories. It's all about what you eat, and how much in a full 24 hour period. Eating just before bed probably isn't a good idea though due to problems it can cause with sleep, and your stomach.

I did an experiment recently to test the idea of calories in, calories out. I found what my caloric needs were to maintain my current weight, and subtracted 1000 calories from that which gave me a deficit of 7000 calories a week (an equivalent of 2 pounds). For three weeks I did absolutely no exercise other than my daily activities. I ate what I wanted when I wanted as long as I didn't go over X amount of calories in 24 hours.

The verdict. I lost 2 pounds each and every week. In fact the third week I lost 3. Not snacking late in the evening, or after dinner to lose weight while not necessarily a myth, does not benefit you unless you've already reached your caloric limit for the day by diner time.

accepting body changes
I just wanted to provide a little hope for anyone worried about lose skin. I wish a could remember the guy's youtube channel, because I'm always coming across threads like this where people are worried about lose skin (as am I). This particular guy lost over 100 pounds, and while he was looking fit, trim, and even muscular, he had a pretty bad case of sagging skin in the belly. It did eventually go away though. This guy was in his mid 40's if that helps.

My Opinion:

Based on the fact that skin is a living organ, and that the average person shed about 8 pounds of dead skin cells each year, that skin really has no choice but to snap back over time. It might take several years, but I think it will go back.

Some things I'm convinced will help with the initial amount of loose skin is to lose weight slowly, keep hydrated, eat skin healthy foods (daily), and maybe using some cocoa butter on those places where lose skin will be most prominent like on the belly, or under the arms. Try not to get too much sun, and if you smoke, don't.

Again, I want to stress this is just my opinion based on the reading I've done.
