Rote Linsen sind tolle pflanzliche Eiweißlieferanten und ideal für die schnelle Küche, weil sie schnell gar sind.

Directions
- 2 EL Öl erhitzen und die Linsen leicht andünsten, Curry einrühren und mit Brühe aufgießen. Zugedeckt bissfest garen.
- Mit Salz und Pfeffer abschmecken.
- Karotten und Zucchini putzen und in Scheiben schneiden.
- 1 EL Öl erhitzen und die Karotten ca. 5 Minuten zugedeckt dünsten lassen, dann die Zucchinischeiben zugeben und beides bissfest garen.
- Salzen und Kokosraspel und (Soja)sahne unterrühren.
- Gemüse unter die Linsen rühren. Mit Kokosraspeln bestreut servieren.
- Als Beilage passt z.B. Basmati Reis sehr gut.
