Rote-Linsen-Kokos-Curry

Rote Linsen sind tolle pflanzliche Eiweißlieferanten und ideal für die schnelle Küche, weil sie schnell gar sind.

Ingredients

Directions

  1. 2 EL Öl erhitzen und die Linsen leicht andünsten, Curry einrühren und mit Brühe aufgießen. Zugedeckt bissfest garen.
  2. Mit Salz und Pfeffer abschmecken.
  3. Karotten und Zucchini putzen und in Scheiben schneiden.
  4. 1 EL Öl erhitzen und die Karotten ca. 5 Minuten zugedeckt dünsten lassen, dann die Zucchinischeiben zugeben und beides bissfest garen.
  5. Salzen und Kokosraspel und (Soja)sahne unterrühren.
  6. Gemüse unter die Linsen rühren. Mit Kokosraspeln bestreut servieren.
  7. Als Beilage passt z.B. Basmati Reis sehr gut.
