Time to get creative with veggies. I have three zucchini in the fridge and used to I would make zucchini bread, now I don't have a clue how to make them. I need to figure out how to make them before they go bad that doesn't include breading of any kind. Hmm...

i dont think zucchini bread really counts as healthy.. especially if it tastes good.. lol we like to cut ours lengthwise into strips and grill them... then the leftovers can be used in casseroles..

I have just been cutting mine up and adding to salads raw. I would think steaming them and adding a little butter would be good too. I used to saute them in olive oil with red and/or green peppers, mushrooms, onions and add some lemon juice and eat them as a side vegetable dish or instead of lemon, add some spaghetti sauce and use the veggies as a base for your sauce instead of pasta.

I used to make the zucchini bread, not necessarily because it was healthy per se but because it was a way to sneak veggies into my son's diet. He won't touch them otherwise. These ideas sound great and I'm going to have to try them. Thank you both. :)
