I have no idea why I'm 2lbs up. Am I super hydrated? Am I carrying undigested food? There is no way I could be gaining fat while consuming 1600 calories a day and burning 3000. Not an inspiring thing to see on my 1 day of the week when I recover from the 6 I bust my ass exercising. Time to see how many calories an oz of scotch has.

I would agree to both of those, being hydrated and the food. Have you taken your measurements as of yet to see if those have dropped even though the scale hasn't? ~tig

Actually, if your working out really hard, your muscles retain water to help them heal. This can show on the scale as a temporary gain. Google "why the scale lies" for some insight in to why you can gain even if you do everything right.
