Alright, I'm back on the wagon, and am going in the right direction! I tried tofu for the first time last night, and it was actually good. I made a great veggie and tofu "stir-fry" (just used water instead of oil with lots of basil, oregano, and red pepper flakes) and served over 3/4 cup of brown rice. It was actually really good, and I have leftovers for lunch!
