I was so hungry, while the cabbage was steaming I ate my beets...I love beets. (Any beet sugestions?)

I have yet to find a way to make them tasty... not a huge beet fan. I don't mind the golden beet as much, but the red beet tastes like dirt/earth way too much.

beets are so good for you. I love them juiced with apples and lemon.. even my kids love it.

Slice thin about 1/4 inch thick and bake on a greased sheet pan at 400 degrees F. Single layer. I use coconut oil. Turn every 10 minutes until crispy on the outside. Beet chips are delicious!

I do love the root chips by Terra Chips. I think they just color the other chips with beet juice though. I am willing to try beet chips. Maybe I shall pick some up next trip

I wash them, wrap in tin foil and bake at about 400425 for an hour. Depending on the size. Big ones take about 75 min. Let them cool then just rub the skins off. Drizzle a little balsamic or golden balsamic vinegar on them. Pepper fabulous.
