4oz cream cheese
1/4c sour cream
1/4c heavy whipping cream
1 to 2tsp erythritol
1/2tsp vanilla extract
pinch of true lemon (or true orange)
1 egg
Room temp cream cheese (or Iheat my cream cheese for about 30 seconds to warm it up straight from fridge) Stir together all ingredients. Microwave on high for 90 seconds storing every 30 .. Then microwave for 30 - 60 seconds or til the middle isn't liquid. Put this in the fridge for an hour or freezer for 15 minutes. For a quick cheese cake it's not bad. You could up the lemon and make it into a lemon custard desert even.

yeah I have made it several times.. it's always good.. but way better when it's actually cool when you eat it lol
